The real key to Bloomin’ Onion Bread is making sure you buy the right kind of sourdough bread. It should be crisp and firm, with a hard crust. Why? Because you’ll be slicing the bread both lengthwise and widthwise, without cutting through the bottom crust, so that you end up with small squares. This can be a little tricky, but the right bread is very forgiving. (If the bread is too soft, all that cutting back and forth will make the whole thing fall apart.)
In the slices, cracks and crannies you’ve created by cutting the bread lengthwise and widthwise, you’ll insert Monterrey Jack cheese. Then combine melted butter, sliced green onions and poppy seeds, and pour over all.
