Ingredients

  • 1 2/3 cups flour
  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 15 oz can pumpkin *pureed pumpkin, NOT pumpkin pie filling
  • 1/2 cups vegetable oil
  • 2 large eggs
  • 1/4 cups water

Directions

  1. In a large bowl, mix together flour, sugar, baking soda, baking powder, cinnamon, salt and nutmeg together with a whisk.
  2. One at a time add in each egg, then add in pumpkin, vegetable oil and water and continue mixing until all ingredients are incorporated
  3. Scoop about one and a half cups of batter into temp-tations mini loaf pan.
  4. Bake at 350 degrees for 30 minutes or until a toothpick comes out clean. Let cool completely before cutting.
