A few weeks ago, I asked Facebook fans what was their favorite kind of birthday cake or cupcake. And Red Velvet was far and away one of the most popular answers! So in the spirit of summer celebrations, I’m bringing you these luscious Red Velvet Cupcakes – little personalized versions of the classic cake! What a wonderful dessert for celebrating a summer birthday, anniversary, 4th of July, or any special occasion.
Moist and delicious, these cupcakes feature just the right amount of cocoa powder for that traditional Red Velvet flavor, as well as a yummy cream cheese frosting that really takes them over the top! And of course, they bake up beautifully (and look gorgeous) in both Old World muffin pans and Polka Dot muffin pans.
For an easy and adorable way to decorate these little cuties, try almond and raspberry flowers. To create the flower petals, simply insert the narrower end of 7-8 almond slices in a circular pattern on top of the cupcake . Then gently add a fresh raspberry right in the center, and you’ve got a beautiful, edible flower on top of each cupcake! (Want to add a touch of blue to the red and white for 4th of July? Substitute fresh blueberries for the raspberries.)
