I love holiday dessert decorating ideas that are both easy and adorable, and these Bird Nest Cupcakes definitely live up to those standards.
Who knew they’d be so stinkin’ cute and simple to make?!
The twiggy, dark nests are made from a cooled mixture of chow mein noodles, melted chocolate chips and melted peanut butter chips. And the fluffy, colored nests are made from flaked coconut that’s been tinted with food coloring. The eggs nestled in the middle of each are Cadbury mini eggs and Whoppers mini Robin Eggs.
Here’s how to make them:
1) Bake up some lovely cupcakes in your temp-tations muffin pans, using your favorite vanilla or yellow butter cupcake recipe or cake mix. (You can use another flavor, but I think the nests look better against light-colored cupcakes). Spread on a little vanilla frosting – again, use your favorite frosting recipe or ready-made frosting from a can.
2) For the twiggy nests, measure out equal parts chow mein noodles to chocolate and peanut butter chips. Melt the chips in the microwave in 30 second intervals, stir till smooth, and add the chow mein noodles to the bowl. Mix to combine.
Drop little mounds of the mixture on a parchment-lined cookie sheet, gently press a few candy mini eggs into the center of each, and let harden (or refrigerate). If you’d like a more rounded shape like the ones pictured here, line little glass prep bowls with cling wrap, and press the chow mein mixture into the bottom and up the sides of the bowls. Add mini eggs in the middle. Once hardened, remove the cling wrap, and voila! You have adorable rounded birds’ nests. Press nests gently into the frosting on top of the cupcakes.
3) For the coconut version, simply add a cup or so of flaked coconut to a ziploc bag. Add a drop or two of your favorite food coloring (or drops of two different colors), close the bag and gently toss the coconut mixture until desired color is reached. Gently mound coconut on top of the frosted cupcakes and add a few mini candy eggs in the middle of each.
