While some might say this is not technically mac ‘n cheese, it is a wonderfully delicious Whole Wheat Penne Primavera with yummy fresh veggies, feta cheese and Parmesan cheese. And if you’re trying to fit in one or two healthy, comforting meals between holidays (and who isn’t?), then you’ll want to add this “mac ‘n cheese-ish” recipe to your list.
What I love about this recipe is its versatility and how quick and easy it is to make. You can use either fresh or frozen vegetables, in any combination that you prefer, as well as whole wheat pasta (which is a little healthier, with more fiber) or regular pasta. It’s also a great way to get the comforting feel and flavor of mac ‘n cheese, but in a slightly more grown-up way 😉
Here, I used whole wheat penne and fresh veggies – sauteeíng sliced baby bella mushrooms, grape tomatoes and a few big handfuls of baby spinach in garlic.
