This super simple, Easy Tex-Mex Casserole is a big favorite of mine! It always receives rave reviews, comes together in a snap, and is very adaptable – you can change or alter ingredients based on your family’s preferences.
On top of that, it’s healthy! (Just go easy on the cheese, or use a low-fat version.) Here, I’ve made it in a temp-tations 9″ fluted deep-dish pie pan, but the recipe can be easily doubled and baked in a 4 quart casserole to feed a bigger football party crowd
My Easy Tex-Mex Casserole is somewhat similar to a 7-layer dip, in that it’s built one layer over another. And while I like to serve it as the main dish, you could easily serve it as a hearty dip with chips. You can’t beat that kind of versatility!
Featuring rice, seasoned ground turkey cooked with onions and a can of diced tomatoes, corn, refried beans, cheese, and topped with chopped tomatoes and green onions, this Easy Tex-Mex Casserole is delicious! Top with additional favorites to suit your tastes – from black olives and avocado to fresh chopped cilantro and sour cream (or plain Greek yogurt).
