Steak Nacho Casserole is a delicious make-ahead, freezer-friendly casserole for the busy, back-to-school season. It brings together great Mexican flavors for a hearty, one-dish meal that’s simple to prepare and fun to eat Make it ahead of time, refrigerate or freeze it, and then cook it when it’s most convenient for you!
And it sure looks yummy in this gorgeous Carved Old World 1.5 quart baker, if I do say so myself 😉
Steak Nacho Casserole is a very adaptable recipe, too. Featuring chopped, cooked steak (we used a T-bone in this recipe – which is delicious AND inexpensive), corn, black beans, lime juice, salsa, cheese and corn tortillas, the dish features ingredients that can be adjusted, and you can make substitutions based on your family’s preferences.
Like other popular Mexican-style dishes, this recipe involves building one layer over another. And then the whole thing gets topped with cheese and jalapeño slices (fresh or pickled – or leave them off if you don’t like too much spice!)
Just be sure to serve with additional goodies like tortilla chips, sour cream or plain greek yogurt, chopped avocado, chopped cilantro and more salsa in little ramekins. That way, everyone can customize their own serving!
Any way you slice it, you can’t go wrong with this Steak Nacho Casserole recipe.
