  • 8 oz bittersweet chocolate, chopped
  • 8 tbsp unsalted butter
  • 8 tbsp granulated sugar, divided
  • 4 eggs, separate whites and yolks
  • 2 tsp vanilla extract
  • Pinch salt


  1. Pre-heat oven to 375 degrees
  2. Using a double boiler, melt chocolate and butter, stirring occasionally. Once melted remove from heat and mix in 4 tablespoons of sugar until combined. Then add egg yolks and vanilla extract, stirring until combined. Set aside
  3. In a medium bowl, beat egg whites and salt until soft peaks form. Add 4 tablespoons of sugar and beat until soft and glossy
  4. Fold egg white mixture into chocolate in increments and then divide evenly among the four mini casseroles
  5. Bake for 15 minutes or until the tops of the cakes puff up and begin to crack. A tooth pick inserted in the center should come out unclean. Serve warm with ice cream or whipped cream
